Roast Pork. Adobo Style.

The love affair with pork (and Filipino cuisine) continues…

  • Pork Roast, 2.5 pounds
  • 1 small white or yellow onion

Adobo MarinadeThanks to SkinnyTaste.com for the marinade recipe:

  • 1/2 cup apple cider vinegar
  • 1/2 cup low sodium soy sauce
  • 1 small head of garlic, crushed
  • 4-5 bay leaves
  • Fresh ground pepper (about 9-10 turns?)

Combine the ingredients for the marinade in a ziploc bag.

Rinse and pat dry the pork.  

Put the pork in a bag and marinate overnight.  Or for an hour or so, if you've been too busy watching Sons of Anarchy to pay attention to anything else.

Preheat the oven to 450 degrees.  Put the marinated pork, marinade and some chopped onions (about 1/2-in to 1-in in size), into a cast iron dutch oven and bake uncovered for 10 minutes to give the outside a good color.  

Lower the temperature to 275 and continue baking (still uncovered) until the internal temperature reaches somewhere around 150 degrees.  This took almost an hour and a half for a 2-1/2 pound roast.  

Baste the roast while it's baking to help enrich the flavor and keep it moist.  Plus it's fun!

Allow meat to rest for about 10 minutes, slice and serve with rice and black beans.

Spicy Shredded Pork

I love pork and I love the Pioneer Woman…  So you can imagine my disappointment when I tried her recipe for Spicy Shredded Pork and it was meh.  To be fair, I guess technically it was her sister's friend Cynthia's recipe?  Or something like that.  But still.  It was just meh.  Not spicy, not even spiced.  Just meh.  But it sure does look pretty…

I will be sticking with my normal recipe from now on.  Or until PW comes up with another one to try… After all, you can't give up on love.

My normal recipe from the Better Homes and Garden's Cookbook:

Shredded Savory Pork

  • 1 3-pound pork shoulder
  • 8 cloves garlic, minced
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp dried oregano, crushed
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground red pepper (I just use a pinch of cayenne)
  • 1 cup beef broth (I usually just use the can)

Trim the excess fat from the meat.  Make  a rub out of the spices and coat the pork roast.  Place the meat in a slow cooker, pour broth around the meat and cook on ow for 8-10 hours or high for 4-5 hours.  Alternately, you use a roasting pan; just cover and roast at 325 degrees for 2 1/2 to 3 hours.
